Broken Rice is a class of rice broken in the milling process or drying process. It is separated out after the polishing stage has the same chemical composition as polished rice. Broken rice are actually broken polished rice kernels that are 25% or less of the original length of the grain; they may represent 2-3% of rice grain processed.
